Potato Salad Pantry Style

Instead of 12 medium potatoes, make mashed potatoes with: 4 Cups Potato Flakes 4 Cups Water 1 1/2 Cups of Milk 1 Teaspoon Salt 6 Tablespoons

Instead of 12 medium potatoes, make mashed potatoes with:

4 Cups Potato Flakes

4 Cups Water

1 1/2 Cups of Milk (fresh, shelf stable or powdered reconstituted)

1 Teaspoon Salt

6 Tablespoons of Butter

The rest of the ingredients:

2 Cups Shredded Cheddar Cheese

2 Eggs, beaten

Bring the four cups of water, butter and salt to a boil.

Remove from heat.

Stir in the milk, and the potato flakes, combining thoroughly.

Add at least half the cheese, saving some to sprinkle on top.

Stir in beaten egg and mix thoroughly.

Spread into a greased 9 x 13 pan and bake at 350 degrees for 25-30 minutes.

Sprinkle remaining cheese on top and return to the oven for five minutes.

Serve.
