Meat Loaf Supreme

This recipe came from the cookbook of Laura Ingalls Wilder. I bought the book at her home place and museum in Mansfield, Missouri.

1 1-2 lbs lean chopped beef

1/2 lb pork sausage (Italian, sage, spicy, breakfast, etc.)

1 egg, beaten

1 cup milk

1 cup fresh bread crumbs

1 medium onion, chopped fine

1 teaspoon salt

1/4 teaspoon pepper

1 (8 oz) can mushrooms, drained

Preheat oven to 375 degrees.

Combine all ingredients except mushrooms. Form into loaf shape and place in greased 9 1/2 x 5 x 2 inch loaf pan.

Bake for 40 minutes, uncovered, until meat loaf is firm in center.

Spread mushrooms over top of meat loaf and bake an additional 30 minutes.
