I got this recipe from ReadySetEat, changing to fit my tastes
1 Cup dry orzo pasta, uncooked
Cooking spray
1 pound of boneless skinless chicken breasts, cut into bite-sized pieces
1 medium yellow onion cut into strips
1 green pepper, cut into strips
2 cups of zucchini, cut into bite sized pieces
1 pint diced tomatoes
1 8 oz can tomato sauce
1 Teaspoon basil
1/2 Teaspoon Oregano
1-2 garlic cloves, minced
Salt to taste
1/4 cup shredded Parmesan cheese
Cook pasta according to package directions
Spray large skillet with cooking spray and cook chicken, peppers and onions until chicken is no longer pink, stirring occasionally.
Add the zucchini, tomatoes, tomato sauce, herbs, and garlic and stir well.
Reduce heat and simmer for 10 minutes or until zucchini is tender.
Serve chicken dish over the prepared pasta and serve with the Parmesan cheese.
