This soup was a submission to the Cookbook of the Collapse. I regret to say that I’ve lost the information on who submitted it in my recent hasty move. I have also made some changes to the recipe, showing measurements to the best of my ability. Thank you for submitting this recipe!
1 Pound Ground Beef (or other meat of choice)
5 medium potatoes, peeled and diced
1 Quart of Beef Broth
2 Bay Leaves
1 Pint of diced tomatoes
1 Can of Corn, drained
1 Can Carrots, drained
1 Can of Peas, drained
Salt, Pepper, Onion Powder, and Garlic Powder to taste
Brown the meat in a soup pot on medium heat.
Add the diced potatoes and beef broth.
Simmer until potatoes are fork tender.
Add the corn, carrots and peas.
Season with salt, pepper, onion powder and garlic powder.
Simmer until all vegetables are heated through. Serve.
