Crock Pot Swamp Potatoes

I got this recipe from Mandy Rivers of South in Your Mouth, making it my own version

1.5 pounds small potatoes, washed and diced into 1 inch cubes

1 large onion, diced

1/2 cup (1 stick) butter

1 tablespoon Cajun/Creole seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 pound smoked sausage, diced

1.5 to 2 pounds fresh green beans (or 4 cans, two drained, two not)

Dice potatoes into 1 inch cubes and place into a large crock pot.

Place the potatoes and onion into a large crock pot . Place the stick of butter on top.

Add the salt, pepper and Creole seasoning and cook on high for two hours.

Add the smoked sausage and trimmed or canned green beans and cook on low for a couple of hours. Of course, all can be added together at once and cooked on low for six hours if desired.

Taste for seasoning and serve.
