This is an easy one-pot meal. Leave the chicken breasts whole if you prefer. I like them already cut to save from having to do so at the dinner table. Toss in broccoli or other favorite vegetable.
4 slices thick cut bacon, cut into pieces
4 boneless skinless chicken breasts, cut into pieces
Salt and Pepper
2 teaspoons ranch seasoning
1 1/2 cups mozzarella
Chopped chives for garnish
In a large skillet over medium heat, cook the bacon until crispy. Remove from pan. Drain most of the fat.
Season the chicken with salt and pepper and ranch seasoning. Cook in the pan over medium high in the remaining bacon grease drippings until cooked through.
Return heat to medium and sprinkle with the crumbled bacon, mozzarella, and chives. Serve
