Cheese Potato Puff, Traditional

12 Medium Potatoes, peeled and cubed

2 C Shredded Cheddar Cheese

1 1/4 C Milk

1/3 C Butter softened

2 t Salt, divided

2 Eggs, beaten

Preheat oven to 350 degrees and grease a 9×13 inch pan.

Place the potatoes in a saucepan and cover with water and 1 teaspoon salt; cook until tender.

Drain and mash.

Add 1 1/2 cups cheese, milk, butter and 1 teaspoon salt.

Stir in beaten eggs and spread into a greased 9 x 13 inch pan, baking at 350 degrees for 25-30 minutes.

Sprinkle with the remaining cheese and bake 5 minutes more or until golden brown.

*Cut recipe in half for an 8×8 inch pan.
