Cheese Potato Puff, Pantry Style

4 C Potato Flakes

6 Cups Water

6 T Butter

2 C Milk

1 t Salt

2 Eggs, beaten

2 Cups shredded Cheddar or Swiss Cheese

Preheat oven to 350 degrees.

Boil water.

Turn off the heat and stir in milk, potato flakes, butter and salt.

Stir in beaten eggs.

When well incorporated, stir in half the cheese.

Pour into greased 9 x 13 pan.

Bake 25-30 minutes, topping the dish with the rest of the cheese in last 5-10 minutes.

Let cool for 5-10 minutes before serving.
